Chicken Fajitas


Ingredients:
  •  200 grams of boneless chicken, finely chopped
  •   1 large onion chopped
  •   1 capsicum, cut into pieces
  •   1 tablespoon green chili chopped 

    For the marinade

    • 1 tablespoon paprika powder
    • 1 tablespoon coriander powder
    • 1 pinch cumin powder
    • 1 tablespoon garlic paste
    • 4 tablespoons olive oil
    • 1 lemon juice

    Method:

    1. Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
    2. In a large bowl, mix paprika powder, coriander powder, cumin powder, garlic paste, olive oil and a pinch of salt. Spread the chicken pieces well in the mixture and leave for 30-45 minutes.
    3. Heat a pan and put the marinated chicken in the pan and fry until cooked.
    4. Now fry with onion, capsicum and green chilies for another 5 minutes.
    5. Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.
