Ingredients:
          2 cups fresh ricotta cheese
          2 teaspoons flour
          1 teaspoon powdered milk
          1 teaspoon sugar
          1/4 teaspoon baking powder
2 tablespoons ghee / melted butter
          Oil for frying
          1 cup sugar
          1 cup water
          2-3 green cardamoms
          1 tablespoon lemon juice

    Instructions:
    1. Steps to make jilapi coil:

Thoroughly moth the cheese until smooth.
Make soft dough with a mixture of cheese, flour, milk powder, baking powder and butter.
Divide the dough into 8-9 parts.
Roll each part like a rope. Make sure there are no cracks.
Make a coil by gently twisting the rope.
          2. Steps for making syrup:

In a heavy pan, boil water, sugar and cardamom over medium heat.
Stir occasionally until the sugar dissolves and bubbles begin to form.
When the sugar is melted, add lemon juice to it. Make sure the syrup is not too thick.

             3. Jilapi frying steps:
Heat oil in a deep pan over medium heat.
Add jilapi and fry over medium heat. Fry until golden around.
Remove from the oil and immediately pour in the hot syrup.
Soak in lilac syrup for 3-5 minutes.
                      Serve and enjoy this time.
        Note:
You can apply some ghee / butter on your palate while making the jilapis coil.
The temperature of the syrup should be moderate to warm, not boiling, when the jilapi is submerged.
Fry the jilapi along with the coiling to avoid creating cracks.
