Thai Fried Rice With Prawn & Pineapple




 Ingredients: 
  •  2 table spoons olive oil 
  •  1 bunch spring onion, green and white cut both separately 
  •  1 green chili powder 
  •  140 g pineapple cut into thick pieces 
  •  3 tablespoons Thai green curry paste 
  •  4 teaspoons light soy sauce 
  •  300 g cooked basmati rice 
  •  2 large eggs, beaten 
  •  140 grams of green peas 
  •  250 g shrimp without peel cooked or raw
  •  2-3 tablespoons lemon juice 
  •  1 handful of coriander leaves
Method:  

  1. Heat the oil in a non-stick frying pan and fry with the white parts of the spring onion for 2 minutes or until soft. Stir in the chilies for 1 minute and then add the pineapple, stir for another 1 minute, then cook with the peas and shrimp until smooth. Add the green curry paste and soy sauce and stir over medium heat.
  2. Add the rice, fry until heated, then remove the rice from one side of the pan and scramble the eggs on the other side. Finally in the rice and eggs, stir in the green part of the spring onion, lemon juice and coriander.
