Crisp Eggplant Fritters |
Ingredients:
1/2 medium size eggplant
1 cup oil
1/2 cup besan
1/2 cup flour
3/4 teaspoon garlic paste
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon red chilli powder
1/4 teaspoon cumin powder
3/4 teaspoon ginger paste
1 cup water
1/2 medium size eggplant
1 cup oil
1/2 cup besan
1/2 cup flour
3/4 teaspoon garlic paste
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon red chilli powder
1/4 teaspoon cumin powder
3/4 teaspoon ginger paste
1 cup water
Instructions
1. Cut 1 eggplant into two halves and then cut into thin slices. If the eggplant pieces turn black (30 minutes or more), please fill a container with water and dip the eggplant pieces. It will bring back the natural color!
2. In a large bowl, combine besan, flour, ginger and garlic paste, salt, baking powder and chilli powder. When mixed, add one third of water. Add the remaining water, make a thick paste. Now take a little time and beat well.
3. Dip each eggplant piece in the batter.
4. Leave the pieces one by one in medium hot oil and fry. Try not to give too many pieces while frying. For best quality, please make sure the slices are not touching the other.
5. When one side turns brown (takes about 2 to 3 minutes), invert and fry on the other side. When folded, transfer to a paper plate.
6. Serve and enjoy!
