Ingredients:

      Yolk of 2 eggs
      1 cup vegetable oil
      3 teaspoons white vinegar
      2 teaspoons lemon juice
      1 teaspoon mustard paste
      1/2 teaspoon salt


Steps:

  1. Bring all your ingredients to room temperature before you start. Beat the egg yolks for an minute or two using an electric hand mixer, blender or a hand whisk.

  2. Add one teaspoon of vinegar and beat for about half a minute. Then add salt, mustard and lemon juice and beat for another 30 seconds or so.

   3. Now run the mixer at full speed. Now add the oil very slowly, like one teaspoon at a time.

   4. When the thickening begins, you can add more oil, but keep it in moderation. Adding too much oil will break down your mayonnaise.

   5. When the emulsion thickens, add a teaspoon or vinegar. Continue adding the oil, pausing occasionally to add more vinegar as the mixture thickens.

   6. The mayonnaise will be made in one time by beating in this way.

   7. Store unused mayonnaise in the refrigerator for two to three days.
