Special Mayonnaise Recipe
Ingredients:
1 large egg
2 clove garlic
1/2 teaspoon sugar
1/2 teaspoon black pepper
1 cup vegetable oil
3 teaspoons white vinegar
2 teaspoons lemon juice
1 tablespoon mustard paste
1 tablespoon powdered milk
1/2 teaspoon salt
Steps to create:
1. Bring all your ingredients to room temperature before you start. Beat eggs and garlic for one or two minutes using an electric hand mixer or blender.
2. Add one teaspoon of vinegar and beat for about half a minute. Then add salt, mustard and lemon juice, powdered milk, pepper, sugar, and beat for another 30 seconds or so.
3. Now run the mixer at full speed. Now add the oil very slowly, like one tablespoon at a time.
4. When the dense formation begins, you can add more oil, but keep it in a fairly moderate amount. Adding too much oil will break down your mayonnaise.
5. When the emulsion thickens, add a teaspoon or vinegar. Continue to add the oil, pausing occasionally to add more vinegar as the mixture thickens.
6. The mayonnaise will be made in one time by beating in this way.
7. Store unused mayonnaise in the refrigerator for two to three days.
